Veal Chop Gorgonzola

Recipe from Dijons Restaurant in Melbourne Beach.

Ingredients: 1 veal chop (8-1/2 ounces); White wine; Pepper; Gorgonzola cheese; 3 cups heavy cream; Chopped fresh spinach; Salt to taste

Pan-sear and grill veal chop. Heat white wine and pepper; reduce by 2/3. Emulsify gorgonzola. Add cheese and cream to wine; reduce by 1/2. Finish sauce with chopped fresh spinach and salt to taste. Serve with garlic creamy mashed potatoes.
