Wild and Crazy Whole Wheat Waffles

Sometimes waffles seem the perfect breakfast -- a crisp, piping hot Belgian waffle, with deep pockets to hold butter and maple syrup: Yum! The following is a waffle with a difference..whole wheat, light (because the egg whites are beaten separately and gently folded into the batter), and crisp with wild rice and toasted pecan pieces.

Ingredients

2 cups whole wheat flour

2-1/2 teaspoons baking powder

3/4 teaspoon baking soda

1/2 teaspoon salt

2 Tablespoons honey

4 eggs, separated

1 cup yogurt

1-1/3 cup milk

1/3 cup melted butter or corn oil

1-1/2 cup of cooked and cooled wild rice

1 cup chopped pecans, toasted

In a large bowl, sift together the flour, baking powder, baking soda, and salt. In separate bowl, blend together the honey, egg yolks, yogurt, milk and oil or butter. Add the dry mixture to the wet, blending thoroughly. Beat the egg whites until stiff but not dry and fold into batter. Make waffles according to directions for your waffle iron, sprinkling 3 tablespoons of the cooked and cooled wild rice and 2 to 3 tablespoons pecan pieces over batter for each waffle after it has been poured onto waffle iron.
