Frittata Di Zucchini

Ingredients

1/2 cup sliced zucchini

2 slices onion

2 Tablespoons butter

3 eggs

3 Tablespoons water

1/4 teaspoon basil or thyme

1/2 teaspoon salt

1/8 teaspoon pepper

2 Tablespoons chopped tomato

1 Tablespoon grated Parmesan or Romano cheese

Saute the zucchini and onion in 1 Tablespoon of butter until tender. Combine the eggs, water, basil/thyme, salt, and pepper in a bowl and beat just until the egg yolks and whites are blended. Melt 1 Tablespoon butter in omelette or large frying pan. Add the zucchini mixture to the egg mixture and pour into a hot pan. Sprinkle with the tomato and grated cheese. Cook until set. Set under the broiler until cheese melts and is browned.
