Orange Thyme Pancakes

Ingredients

2 cups all-purpose flour

1 teaspoon salt

2 teaspoons baking soda

1/4 cup granulated white sugar

1/2 teaspoon thyme

2 eggs

1-3/4 cups orange juice

1/4 cup butter

Orange Butter

1/2 cup melted butter

2 Tablespoons cornstarch

2/3 cup granulated white sugar

1 ounce orange zest

1 pint orange juice

maple syrup

Mix the dry ingredients in a bowl. Melt the 1/4 cup butter. Beat the eggs, orange juice and butter together then add to and mix with the dry ingredients.

To make the Orange Butter: Melt the butter with the cornstarch or one minute then cool. Heat the orange juice and add butter-cornstarch mixture, stirring until thickened. Add the sugar and bring to a boil. Simmer for 5 minutes. Add equal parts of orange butter and maple syrup.
