Ingredients:

1 cup all-purpose flour

1-1/2 teaspoons baking powder

1/4 teaspoon salt

2 Tablespoons sugar

1 egg

1/3 cup milk

1 Tablespoon shortening, melted

8 canned peach halves

sugar

Sift the flour. Add the baking powder, salt, and sugar. Beat the egg and milk together. Add dry ingredients and mix well. Add shortening and mix well. Dip the peach halves into the batter and brown in oil in a shallow pan. Sprinkle with sugar and serve warm.

Makes: 8 fritters
