Greek Frittata

Ingredients:

8 eggs

Salt and Pepper to taste

1 teaspoon Greek seasoning

1/2 cup chopped onion

1 cup cooked spinach

1/3 cup Feta cheese

2 Tablespoons butter

Beat eggs, salt, pepper, and Greek seasoning; set aside. In a 10-inch skillet melt butter; cook onion in butter until golden. Add spinach; stir. Pour egg mixture into skillet and cook over medium heat. As mixture sets, run a spatula around edge of skillet, lifting egg mixture to allow uncooked portions to flow underneath. Continue cooking and lifting edges until egg mixture is set. Sprinkle with pepper and Feta cheese. Cut into wedges.
