Zucchini Pecan Bread
Preheat oven to 350 degrees. Coat 9 x 5 x 3-inch loaf pan with vegetable spray. In a large bowl mix together flour, sugar, baking soda, baking powder, salt, and cinnamon. In smaller bowl whisk together eggs and oil, then stir in zucchini, pecans, and orange zest. Pour egg mixture into flour mixture and mix together by hand. This will be a stiff batter. Spoon into prepared loaf pan and bake for 50 minutes until tester comes out clean. Cool slightly before serving.
