Chef's Note: This is a creative recipe in which the precise measurement, preparation of the mix, and cooking variables are trade secrets know only to the chef! Traditional crab cakes are those made with a mix of the ingredients recommended below and amounts to suit the chef's particular taste.
Pre-cook onions, taking care not to lose firmness or texture. Slightly saute green bell peppers to release full flavor
Mix crab, eggs, cooked onions and green peppers, bread crumbs, black pepper and small amount of salt (often crab meat is already naturally, slightly salty). Add sufficient cream to bind the mixture lightly.
Saute butter until brown and quickly add parsley to release parsley's natural flavor. Form cakes and drop in butter, cooking sparingly so as not to lose the enhanced fresh crab flavor. Remove and serve.
