Apple Cinnamon French Toast

Ingredients
5 Tablespoons butter
6 to 8 large baking apples, cored and sliced
1 cup packed dark brown sugar
2 Tablespoons dark corn syrup
1 teaspoon ground cinnamon
Eight 1-inch thick slices of large French bread (4 inches wide)
6 large eggs
1 cup milk
1 teaspoon vanilla extract

The day before serving: In a large skillet, melt butter. Add apple slices and cook, stirring occasionally, until tender. Add brown sugar, corn syrup, and cinnamon to apples. Cook, stirring, until sugar dissolves. Pour apple mixture into 13 x 9-inch greased baking pan. Spread to even layer. Arrange bread slices on top of apple mixture. Beat eggs, milk, and vanilla. Pour over bread. Cover and refrigerate overnight.

The next morning, heat oven to 375 degrees. Remove cover and bake 30 to 35 minutes or until mixture is firm and the bread is golden. Cool in pan for 5 minutes. Serve immediately.

To make extra syrup, melt 2 to 3 Tablespoons butter and add 2 to 3 Tablespoons corn syrup. Sprinkle with brown sugar, and bring to a simmer. Serve warm.
