Ingredients:

2 medium eggs, separated

1/2 teaspoon dry mustard

1/2 cup cheddar cheese, grated

1 Tablespoon mayonnaise

1 Tablespoon parsley, chopped

4 rolls, sliced; or English muffins or toast

8 ounces ham, sausage slices or Canadian bacon, optional

Preheat oven to 350 degrees. Spray your ramekins or small individualized baking dishes or grease well. Slice the rolls or English muffins and place in the baking bowls. If using meat, place on top of the bread. Separate the egg yolks from the whites, putting the whites in a bowl to whip. Beat the egg yolks in a separate bowl until thick. Add the mustard, cheese, mayonnaise and parsley and mix well. Beat the egg whites until stiff and fold into the egg yolk mixture. Spoon this egg mixture lightly on top of the bread, repeating for as many bowls as you are preparing. Place the baking bowls on a cooking sheet or pan and put into the oven for 3 to 5 minutes at 350 degrees, or *broil for 3 to 5 minutes at 500 degrees until the sandwiches are puffy and lightly browned.

Serving ideas: Meat can be served along side this dish but also tastes wonderful sandwiched between the bread and egg-cheese mixture.

Note: *Occasionally when the recipe has been increased the egg-cheese mixture has not cooked completely but the egg whites begin to burn. Placing the egg dishes in the 350 degree oven for a few minutes first helps to ensure the egg-cheese mixture is cooked
