Night-Before French Toast Casserole

One 10-ounce long, thin loaf of French/Italian bread
8 large eggs (1 more can be added for fullness)
3 cups milk
4 teaspoons sugar
3/4 teaspoon salt
1 Tablespoon vanilla extract
Little bit of cinnamon
2 Tablespoons butter, cut into small pieces

Lightly grease a 13 x 9 x 2-inch baking pan with shortening. Cut the bread into 1-inch thick slices and lay them in the pan (fill all the spaces, even if you have to cube the bread to force it in). In a large bowl, mix all the remaining ingredients except the butter. Pour the mixture over the bread and press down gently on the bread to help soak it up. Cover with foil and refrigerate overnight.

In the morning, uncover and drop little pieces of butter onto the casserole. Bake casserole, uncovered, for 45 to 50 minutes at 350 degrees until puffy and lightly browned. Let casserole sit for 5 minutes before serving.

Other suggestions: Use whole wheat bread, layer the top with apples, or use a streusel topping (butter, brown sugar, cinnamon, and nutmeg, crumbled together).
