Renaissance Eggs

Ingredients

Egg Filling:

1 dozen eggs, whipped

1 teaspoon salt

1 teaspoon pepper

1/2 teaspoon nutmeg

1 Tablespoon basil

1/4 cup chopped onions

1/4 cup each of 2 chopped vegetables (your choice)

1/2 cup of water

6 English muffins

Basil Garlic Butter:

1/2 teaspoon basil

1/2 teaspoon garlic powder

1/3 cup melted butter

1/4 cup diced tomatoes and/or diced pepper (use as garnish over Butter)

Mix ingredients together and pour into a 3-quart greased casserole dish, be sure to grease sides of dish so the eggs will rise. Bake for approximately 25 minutes at 375 degrees. Check often! Sprinkle grated Feta or cheese of choice on top with approximately 3 minutes left to bake. Cut into squares; place square on top of English muffin. Top with about a teaspoon of the Basil Garlic Butter and the tomatoes or green peppers.

Serves: 12. Allows for 1 egg per guest.
