Yogurt/Blueberry Pancakes

An easy, but tasty and never-fail pancake with blueberries inside and out!

Ingredients

1 cup good-quality pancake mix

1 egg (free-range is best)

1 Tablespoon melted butter

1/2 cup milk

1/2 cup yogurt

1/2 cup fresh or frozen wild blueberries

Sauce:

1/2 cup blueberries

1/2 cup prepared berry jam

2/3 Tablespoons frozen concentrated apple or grape juice

Prepare pancake mix, egg, melted butter, milk, and yogurt in bowl; whisk lightly to blend. Prepare griddle with a light coating of olive oil until very hot. Spoon pancake mixture onto griddle and sprinkle each pancake with blueberries. While pancakes are cooking, prepare the sauce.

Sauce: Place ingredients in sauce pan and cook until bubbling, stirring constantly. Reduce by 1/3. Drizzle sauce around and over the pancakes and dust the plates with powdered sugar. A beautiful presentation!

Serves: 4 (3 small cakes each)
