Stuffed French Toast

Ingredients

1 loaf stale Italian bread, cubed (without crust) -- or use stale croissants

16 ounces cream cheese

1 dozen (12) eggs

1-1/2 cups cold milk

1/2 cup heavy cream

1/3 cup maple syrup

1/3 cup Amaretto (or less, depending on taste)

2 teaspoons vanilla

1 teaspoon cinnamon

1 teaspoon ground ginger

1 cup diced apples

1 cup diced pears

Butter a 9 x 13-inch pan. Place half of cubed Italian bread in pan. Cube cream cheese and place on top of bread. Place apples and pears evenly on top of cheese. Add second half of bread on top of the fruit. Mix the eggs, milk, heavy cream, maple syrup, Amaretto, vanilla, cinnamon, and ginger. Pour this mixture over bread and refrigerate overnight.

Bake at 375 degrees until toothpick comes out dry. Cut and serve with hot maple syrup and powdered sugar on top. When made in advance, cut the Stuffed French Toast and put on broiling dish. Heat and toast lightly on top to warm before serving.
