Sunset Hill House Inn & RestaurantSugar Hill, New HampshireSpecialty RecipeMaple Almond Granola
Preheat oven to 250 degrees. Lightly spray rimmed baking sheet with nonstick spray. Toss oats, slivered almonds, coconut, and sesame seeds together in a large bowl. Whisk syrup, brown sugar, oil, warm water and salt in a small bowl until blended. Pour syrup mixture over dry ingredient mixture and stir to combine. Transfer to prepared baking pan. Bake until evenly browned, stirring occasionally for about 1 hour and 15 minutes. Cool. Transfer to large mixing bowl. Stir in dried fruits. This granola can be made a week ahead and stored in an airtight container. To re-heat the granola before serving or to 'refresh' granola that has been stored for more than one week, stir in 2 tablespoons of oil and 2 tablespoons of maple syrup. Place on baking sheet that has been lightly sprayed with vegetable oil. Heat in oven at 300 degrees for about 30 minutes, stirring occasionally and checking to be sure that granola does not over brown. Makes: Twelve 1/2 cups
