First Colony Potato Frittata

Ingredients

2 pound bag of frozen hash browns or 3 pounds Idaho potatoes, cooked and blanched

Package frozen onion seasoning mix

1 cup diced green or green and red peppers

1 dozen large eggs

1 pint whole milk

1 Tablespoon Greek seasoning

10 drops hot pepper sauce

1-1/2 cups sliced mushrooms

10 Roma tomatoes, diced

2 cups diced ham

1/2 cup grated Monterey Jack or Mozzarella

Night Before: Butter a large flat baking dish (10 x 12 inches or larger). Pour in potatoes. Mix in onion and peppers. Beat eggs and milk and add seasonings. Pour over potato mixture. Sprinkle on mushrooms and tomatoes. Cover with plastic wrap and refrigerate.

In the Morning: Sprinkle with ham. Bake at 350 degrees about one hour (until set), uncovered. Sprinkle with cheese.

Serves: About 14 to 15, cut in squares for easy serving.
