Heritage Recipe

Apple Crisp

This dessert is served every single evening at Snowbird and is a favorite of many guests. I'm a little sentimental about this recipe because my Opa (this is Grandfather in German) taught me how to prepare this dish. I enjoy this dessert topped with vanilla ice cream and a sprinkle of cinnamon. This dessert can be prepared with most fruit other than tropical fruits or citrus. It is especially good with peaches, nectarines, all berries, pears, and apples.

Ingredients
Several crisp, tart apples such as Granny Smith
2-1/4 cups all-purpose flour
2 cups sugar
2 sticks of butter or margarine, chilled and cut into small pieces
Cinnamon
Nutmeg

Core and pare the apples. You may peel them if you'd like to, but I prefer to leave the peel on the apples. (If using peaches, you should peel them.)

Combine flour, sugar, and butter or margarine pieces in a bowl and toss to coat the butter. In batches, process the mixture in a food processor until the mixture resembles coarse meal. When finished, you should be able to press the mixture into "clumps" that will barely hold together when pressed.

Place the apples in a baking dish of your choice. They should fill the container about 3/4 of the way full. Sprinkle the fruit with cinnamon and nutmeg to taste. Form handful "clumps" of the flour mixture and crumble them over the fruit to cover the entire surface of the dish.

Place the baking dish in a 375-degree oven and bake until the topping is golden brown and the fruit is bubbling. Top with vanilla ice cream or whipped cream and enjoy!
