Stuffed French Toast

Ingredients

1 loaf French bread

1 large package of cream cheese

1 jar apricot preserves

4 eggs

3/4 cup half & half

2 Tablespoons orange juice

Nutmeg

Slice bread in about 1-inch pieces and make another slice in the middle, but not all the way through. Set aside. Whip cream cheese and apricots together and spread inside the bread slices. Save about 1/2 cup of the apricots.

Mix eggs and half & half together; add a little nutmeg. Dip bread into egg mixture and fry on a well-greased griddle. Put on cookie sheet and bake at 350 degrees for 5 minutes. Thin the rest of the preserves with orange juice and warm in microwave. Pour over toast.

Serve warm. This is a Sunday favorite and often requested by our guests.
