Crepes

*Ingredients*	4 guests	6 guests	8 guests	10 guests

Sifted flour	1-1/2 cups	2 cups	3 cups	4 cups
Whole milk	2-1/4 cups	3 cups	4-1/2 cups	6 cups
Eggs	2	4	6	8
Salad oil	1-1/2 Tablespoons	2 Tablespoons	3 Tablespoons	4 Tablespoons
Salt	1/3 teaspoon	1/2 teaspoon	3/4 teaspoon	1 teaspoon
Vanilla	1 dash	2 dashes	3 dashes	4 dashes

Preheat oven on warm. Heat small fry pans on medium heat, and heat griddle to 300 degrees. Spray pans with non-stick cooking spray. Take pans off burner each time you fill them. Combine ingredients and place 1/8 cup of batter in pan and rotate to cover bottom. Place on burner. When lightly brown, flip onto hot griddle to sear top. Remove and roll crepes (original bottom side down) and place in baking dish and keep warm in oven.

To serve, place 5 parallel on plate. Lightly drizzle chocolate syrup on crepes and dust with powdered sugar. Just before serving, place a little shot of whipped cream in each open end and garnish with cut fruit across the center for a beautiful presentation that will make your guests feel very special.
