Caramel Apple Pancakes

Melt butter and lemon juice in pan. Combine sugar and cinnamon and stir into butter and lemon; add apples and stir. Cook, covered, on medium heat until boiling, then turn to low heat. Stir apples every 5 minutes. When apples are hot, turn off heat so they don't get brown (they will stay warm a long time if covered). Prepare apple filling 45 minutes before serving time.

Prepare pancake batter by combining flour, eggs, salt, milk, nutmeg, and vanilla. Preheat oven and small fry pans on 425 degrees. Lightly spray pans and add 1/2 cup of pancake batter. Bake for 11 minutes; do not open until time. Place on plate and fill half with apples and drizzle with caramel. Fold empty half over apple side, dust with powdered sugar, and drizzle caramel over pancakes and on plate for a tasty treat with a beautiful presentation.
