Poached Pears

This is so simple but very impressive. The absolute best jam to use is Stonewall Kitchens Raspberry Peach Champagne Jam. The second best is your own homemade jam, but any store-bought jam will do.

Ingredients
Firm pears (1 per person)
Raspberry jam

Peel and core pears. Place upright in microwave safe dish and spread jam enough to cover fruit. Be generous. The jam will liquefy and coat the fruit as it cooks. Cover with plastic wrap. Cook in microwave on high for 2 minutes. Test with cake tester. Continue to cook at 1-minute intervals until desired softness. Serve in upright position in small bowl. Ladle liquid over pear. Serve warm.
