Very Berry Struesel French Toast

Baked French Toast with variety of fruit and a crunchy streusel topping -- one of our most requested recipes!

Ingredients

1 loaf sliced Italian bread (1-inch slices)

6 eggs

4 Tablespoons granulated white sugar

1 teaspoon vanilla

2-1/4 cups milk

2 cups blueberries, raspberries, or strawberries

1/4 cup margarine

1/2 cup white wheat flour

1/2 cup brown sugar

Beat together eggs, sugar, vanilla and milk. Put bread slices in greased 9 x 13-inch pan. Make sure bread slices cover as much of pan as possible; you may need to cut smaller pieces to fit in some of the open spaces between slices. Pour egg mixture over the bread in pan. Cover and refrigerate overnight.

Next morning, preheat oven to 375 degrees while you finish the preparations. Sprinkle fruit on top of bread. Combine margarine, flour, and brown sugar until crumbly (food processor works great). Sprinkle over top of fruit.

Bake at 375 degrees for 35 to 40 minutes until golden and puffed. Let it sit a few minutes, then cut into servings and sprinkle with sifted powdered sugar. Serve with warmed maple syrup on the side. This can be served as a large main dish or cut into small portions for a brunch buffet.
