The Kennebec Inn
This moist bread is delicious served either as a fruit bread for breakfast or as a Bundt cake for afternoon tea. It tastes good baked ahead of time and allowed to set. If served as a cake, you can either sift confectioners sugar over the top or frost with Cream Cheese-Butter Icing.
Set oven to 350 degrees. Mix all dry ingredients together; set aside. In a large bowl beat eggs; add sugar, oil, and zucchini. Add all dry ingredients and mix well. Add vanilla and nuts. Pour into 2 well-greased and floured loaf pans or 1 Bundt pan. Bake in the preheated oven for 45 minutes or until done. Place on a rack for 10 minutes before turning out of pans.
Makes: 2 loaves or 1 Bundt cake
