Zucchini Fontina Frittata

Ingredients

8 eggs

2-1/2 Tablespoons warm water

4 ounces Fontina cheese, cut into small pieces

2 Tablespoons olive oil

3 medium zucchini, cut into 1/2-inch dice

Salt and pepper to taste

2-1/2 Tablespoons chopped fresh oregano

In a small bowl, lightly beat eggs with warm water. Stir in cheese. Set aside. In a 10-inch frying pan over medium heat, heat olive oil. Add zucchini and season with salt and pepper. Saute until lightly browned. Stir in the oregano. Reduce heat to medium. Add eggs and cheese mixture, then preheat broiler. Once eggs begin to cook, lift edges to allow uncooked egg to run underneath. Repeat until most of the egg is cooked. Place pan 6 inches under broiler and broil until top is puffed and golden. Cut into wedges and serve.
