Ingredients:
4 eggs
4 slices toast
Sauce:
1/3 cup butter
2 Tablespoons finely chopped chives
1 Tablespoon lemon juice
1 teaspoon grated lemon peel
1/2 teaspoon salt
Dash of pepper

Poach eggs in an egg poacher for 3 minutes (time is approximate based upon egg size and how well cooked the yolk needs to be). Place each poached egg on a piece of toast and top with sauce.

Sauce: Melt butter. Add remaining ingredients, mixing thoroughly. Serve sauce hot.

Serves: 2
