Lemon Curd (Microwave)

Ingredients:

6 Tablespoons unsalted butter

3/4 cup sugar

2 teaspoons lemon rind

3 Tablespoons lemon juice

3 eggs, beaten

Put butter in bowl and soften in microwave on High for 10 to 20 seconds. Grate lemons, squeeze out juice. Stir sugar, lemon rind, and juice into softened butter. Strain beaten eggs and add to other ingredients. Mix well. Cover with greaseproof paper and cook for 2-1/2 to 3 minutes until thick. Stir every 30 seconds. Pour into jar; allow to set.
