Mediterranean Frittata

Ingredients

1/4 cup chopped pitted Kalmata olives

1 medium zucchini (about 2 cups chopped)

1 red pepper, diced

1/2 cup chopped onion

1/4 cup olive oil

9 large eggs, lightly beaten

1/2 package (4 ounces or 1/2 cup) crumbled feta

1/3 cup sliced fresh basil

1/2 teaspoon salt

1/2 teaspoon freshly ground pepper

1/3 cup Parmesan cheese

Basil for garnish

Cook first 4 ingredients in hot oil in skillet over medium-high heat, stirring constantly until vegetables are tender. Combine eggs, basil, salt, and pepper.

Spray pie dishes or glass baking dishes with non-stick cooking spray. Line bottom with crumbled cheese, then vegetables, then basil. Pour egg mixture over top. Sprinkle with Parmesan cheese. Bake at 350 degrees for 60 minutes or until set. Remove from oven and allow to set several minutes before serving.

Serves: 6. To serve 18, triple all amounts.
