Specialty Recipe


1 envelope dry yeast
1/4 cup warm water (105 to 115 degrees Fahrenheit)
3/4 cup milk
2 tablespoons (1/4 stick) unsalted butter
1/4 cup sugar
1 egg, room temperature
1 teaspoon salt
3 cups all-purpose flour
vegetable oil (for deep frying)

Sprinkle yeast over water in the bowl of a heavy-duty electric mixer and let dissolve. Stir to blend. Let stand for 5 minutes. Scald milk with unsalted butter. Cool to 105 degrees Fahrenheit.

Grease large bowl. Mix milk, sugar, eggs, and salt into yeast. Gradually add flour and beat at a low speed until dough pulls away from the sides of the bowl; about 4 minutes. Transfer the dough to a prepared bowl, turning to coat the entire surface. Cover with a towel and let rise in warm draft-free areas until doubled in volume; about 45 minutes.

Roll dough out to a thickness of 1/4 inch on lightly floured board. Cut into 4-inch triangles. Heat oil in a deep fryer or large saucepan to 375 degrees Fahrenheit. Add sopaipillas in batches (do not crowd) and turn immediately. Cook until golden brown, about 30 seconds per side. Drain on a paper towel. Serve with honey.
