Caramel Apple French Toast

At the Whitegate Inn we serve the French toast with hot syrup and Canadian bacon. We usually serve it every Sunday. Our guests just love it and often ask for it, so every Sunday it is our signature Sunday Breakfast.

Ingredients:

1 cup brown sugar

1/2 cup butter

2 Tablespoons light corn syrup

1 cup chopped pecans

12 slices sweet French bread

8 thinly sliced green apples (peeled)

6 eggs

1-3/4 cups milk

1 teaspoon vanilla

nutmeg and cinnamon to taste

Combine brown sugar, butter, and corn syrup and cook over medium heat until thickened, stirring constantly. Pour into 9 x 13-inch glass baking dish (spray with non-stick cooking spray first). Sprinkle with 1 cup chopped pecans. Place one layer of French bread on syrup and pecans. Top with green apples.

Combine eggs, milk, and vanilla in a blender. Then pour half of mixture over first layer. Place a second layer of sliced sweet French bread on top of apples and cover with remaining eggs and milk mixture. Cover with aluminum foil and refrigerate overnight. Sprinkle with cinnamon and nutmeg and bake, covered, for 50 to 60 minutes at 350 degrees. Each person is served 1 double layer serving. It can also be served with whipped cream.
