Ingredients

2 cups ricotta

2 cups dried or fresh cranberries

2 cups flour (part whole wheat if desired)

1/4 cup sugar

2 teaspoons vanilla

2 teaspoons baking powder

dashes of cinnamon and nutmeg

6 eggs, separated

Beat egg whites until stiff. Mix other ingredients, then fold in egg whites. Cook on buttered griddle until golden on each side.

Good with maple syrup or berry sauce.

Serves: 4 hungry people
