Almond Pate

Ingredients:

1 cup minced onion

1 Tablespoon Butter

1/2 teaspoon Cumin

1/4 cup fresh chopped herbs or Herbes de Provence

1 cup raw almonds, ground fine

1/2 cup Italian bread crumbs

2 Tablespoons fresh parsley

1 to 3 teaspoons soy sauce or to taste

2 small cloves garlic, minced

Salt and pepper to taste

3 to 4 Tablespoons mayonnaise

1. Cook the onions, herbs and cumin in butter until onions are soft.
2. In a large mixing bowl, mix all the ingredients together except the mayonnaise.
3. Add the mayonnaise a tablespoon at a time and work into the mixture until it holds together.
4. Line a mold with plastic wrap and put mixture into mold. Cover with the plastic wrap ends. Refrigerate for at least two hours.

Serve as a pate with crackers. Can also be served as a filling for mushrooms.
