Ingredients - Pie Crust

1 cube (1/2 cup) Fleishman's original margarine

2 Tablespoons hot water

1-1/2 cups flour

Ingredients - Filling

7 large eggs

1/3 cup milk or half & half

About 1/2 cup chopped vegetables (fresh or frozen) -- mushrooms, spinach, and squash all work well, plus a little onion and celery if you have it for flavor

A little chopped bacon or sausage

About 3/4 cup grated cheese (any kind) and a little cottage cheese if you have it

Salt and pepper to taste

Pie Crust: Heat margarine in microwave for 20 seconds or until soft. Add hot water and flour. Mix everything with fork or pastry blender as little as possible but until blended. Form into a ball and place between 2 sheets of waxed paper and roll out from center toward edges until size of pie pan. Remove top layer of wax paper and turn into pie pan; remove other sheet of wax paper.

Filling: Beat eggs a little. Add milk or half & half. Add vegetables and bacon or sausage, then add cheese(es). Mix all together and season to taste. Pour filling in pie crust and bake at 350 for approximately 1 hour (crust will be medium brown and filling will rise and be firm). Let sit for another 5 minutes before cutting.
