Ingredients:
3 cups thinly sliced zucchini
1 small onion, chopped
1 cup Bisquick baking mix
4 large eggs
1/2 cup oil
1/4 cup Parmesan cheese
1 teaspoon parsley
Salt and pepper to taste

Mix all ingredients and bake in a large greased glass dish at 350 degrees for 30 minutes until browned.

Serves: 12.
