Ingredients
1 Tablespoon margarine
1 cup total of desired vegetables; Bell peppers, mushrooms, tomatoes, green onion, broccoli, cauliflower
2 Tablespoons margarine
1/2 teaspoon Italian seasoning
Salt and pepper to taste
3 eggs
2 Tablespoons cream cheese, softened
1/4 cup grated Cheddar cheese

Heat skillet with 1 tablespoon margarine and bring to a "bubble heat". Add vegetable and stir-fry until tender. Remove from heat. Heat skillet with two tablespoons margarine and bring to "bubble heat" again. Mix seasonings, eggs, and cream cheese together and pour into skillet. Let this cook for one minute, then lift side of egg mixture to let liquid egg run under the edges all around skillet. Add vegetable mixture on one side of omelet and spread evenly. Add cheese to top when mixture has finished cooking. Flip over the other half of omelet to make a half moon shape.

Serve and enjoy.
