French Toast with Flaked Coconut
Cut bread into 2 x 3-inch strips. Slightly beat egg together with milk and add cinnamon. Dip bread strips into milk and then coconut. You may then bake in a 9 x 13-inch buttered glass pan at 350 degrees for 20 minutes. Turn over after 10 minutes. Or place in a buttered frying pan or pancake grill on low-to-medium heat for 15 minutes, turning as necessary. (Note: coconut will burn if heat is to high.) This recipe may be made the night before. Cover and refrigerate.
Goes well with pineapple slices and apple pork sausage. If you can't get apple pork sausage in your area, simply add fresh finely diced apple to your regular sausage before frying.
Serves: 4 to 5
