Gluten Free - Low Carb Pizza with Cauliflower Crust

This is the best no flour pizza crust I have ever tasted. No gluten and very low carbohydrates

Ingredients for Crust
4 cup crumbled or shredded cauliflower (about 1 large head)
2 eggs
1-1/2 cups shredded mozzarella cheese
3/4 teaspoon onion powder
3/4 teaspoon garlic salt
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper
1 Tablespoon of butter (melted)
Ingredients for Pizza Topping
1 cup pizza sauce or tomato marinara sauce / spaghetti sauce
3/4 cup mozzarella cheese, shredded
sliced olives, sausage, celery, onions, mushrooms, etc (your favorite ingredients)

Prepare the Crust: Shred the cauliflower into small crumbles. Place the crumbles in a large bowl and microwave for about 8 minutes so that the cauliflower cooks, but does not get soggy. Set aside and let the cauliflower cool. I am impatient so I chill it in the refrigerator for a few minutes.

Preheat the oven to 450 degrees. Used a non stick cookie sheet or pizza pan. (If not non-stick then coat the pan with non-stick spray.) Add eggs, cheese, onion powder, garlic, oregano, salt and pepper to the cauliflower. Mixture should be soft but not wet or soggy. Pat the crust into the baking pan. Brush lightly with butter and bake for 15 minutes or until golden brown.

Prepare the Pizza: Set the oven to broil. Spread the tomato sauce over the entire pizza crust. Sprinkle cheese on top and then add your favorite ingredients. Broil the pizza about 5 minutes until the toppings are hot and the cheese is melted. You can serve immediately.

Tip: I will make more than one at a time - serve one and let the other one cool. Then wrap the cool pizza and place in the refrigerator or freezer so that you can heat it up in the microwave to eat at a later time. Both ways are good!
